ABOUT SNC 

SNC (South vs North Challenge) is a challenge between north indian and south indian teams which is hosted by Divya Pramil (baby boss) from Youtoocancook

GULAB JAMUN - SNC NO. :2

I am a part of southern team. I have challenged north team with Adirasam recipe and Pallavi challenged us with Gulab Jamun recipe

Serving size - 15 to 20 pieces


Preparation time - 10 minutes


Cooking time - 10 or 15 minutes


Standing time - 20 minutes

 

 


Gulab jamun is one of the traditional sweets of India. It is also familiar in Pakistan, Bangladesh and few of our neighbor countries too. I think no one is there without tasting Gulab Jamun. It is most of the people favorite sweet. I love Jamuns forever!!!! This is the first time I tried from scratch. I refer recipe from Pallavi's space - Cook Eat Burp.  Thanks Pallavi!!!


Ingredients

For Jamuns

Milk powder - 1 cup
Maida - 1/4 cup
Ravai - 1 1/2 tsp
Ghee - 5 tsp
Water/ Milk - 1/2 cup or less
Baking powder - a pinch
Pistachio - for garnishing

For Sugar syrup

Sugar - 1 cup
Water - 1 cup
Cardamom powder - a pinch

Method 

Sugar Syrup

  • Bring water and sugar to boil for 5 minutes. 
  • Add cardamom powder, once it started boiling. 
  • Simmer the flame or Off the stove.
  • While adding jamuns to the syrup, syrup should be more warm, but not hot.

Jamuns

  • Mix all the ingredients together into a soft dough and close it with lid or any towel.
  • Keep it aside for 15 to 20 minutes.

  • Then make them into medium sized balls.

  • Heat oil / ghee for deep fry.
  • Once it is hot, reduce it to low flame and fry all the jamuns.

  • Finally add jamuns to the sugar syrup.

  • If you would like to garnish, garnish it with pistachio, almonds, coconut flakes, cashews or as wish any nuts.


Note

  • While frying jamuns, turn the jamuns in the equal interval to get same color all through the jamuns.
  • Before frying all jamuns, fry one jamun for sample. According to that result, you can manage the flame.

WHEAT DOSA / GODHUMAI DOSAI

Serving size : 2


 Ingredients

Wheat flour - 1/4 cup
Rice flour - 1/2 cup
Water - 4 1/2 cups to 5 cups
Onion - 1/4 cup
Curry leaves - 4 or 5
Cumin seeds - 1/4 tsp
Green chillies - 2 or 3
Hing powder - a pinch
Salt - as required
Oil - 2 tsp



Method 1:

  1. Mix wheat flour, rice flour, salt and water in a large bowl without any lumps. The batter should be watery than usual dosa batter.
  2. Add cumin seeds, hing powder, onions, green chillies, curry leaves to the batter.
  3. Finally, pour 2 or 3 laddles of batter on the heated tava. Add sesame oil and cook both the sides. It will be crispy. If you want less crispy, reduce water.
  4. wheat dosa is ready. Serve it with idli podi, sambar or any chutney.

Method 2:

  1. Mix wheat flour, rice flour, salt and water in a large bowl without any lumps. The batter should be watery than usual dosa batter.
  2. Add 2 tsp of oil in a heated pan. Seasoning with cumin seeds and hing powder, then fry onions, green chillies, curry leaves until onion gets golden color.
  3. Finally, pour 2 or 3 laddles of batter on the heated tava. Add sesame oil and cook both the sides. It will be crispy. If you want less crispy, reduce water.
  4. Wheat dosa is ready. Serve it with idli podi, sambar or any chutney.

MY FRIEND SIRI'S GIVE AWAY FOR CELEBRATING 1ST BLOG ANNIVERSARY

MICROWAVE PUSANIKKAI HALWA / ASH GOURD HALWA IN MINUTES

Serving size - 1 kid


Preparation time - less than 5 minutes


Cooking time - 6 minutes

 

 



Halwa is very famous sweet in India. We can do halwa using fruits, veggies and flours too. I made this ash gourd halwa for my kid within 10 minutes. My kid does not like any scraped nuts so I din't use cashews.


Ingredients


Grated Ash gourd - 1/3 cup
Sugar - 3 tsp
Water - 1 1/2 tsp
Ghee - 1/4 to 1/2 tsp
Cardamom - a pinch
Cashews - 1 or 2 (Optional)


Method


  • Keep grated ash gourd for 1 or 2 minutes in microwave. Keep it aside.
  • Mix sugar, cardamom and water. Keep it for 2 or 3 minutes or until get single string consistency.
  • Add any food color and microwaved ash gourd. Keep it for 2 minutes and stir between every one minute.
  • Add ghee and keep it for 30 seconds. If you wish, you can add ghee roasted cashews to the halwa.
  • Serve it to your kid.

HOME MADE VEGGIE BROTH / CHICKEN BROTH



Veggie filtered water can be used as veggie broth. Chicken filtered water can be used as chicken broth. You can use that broth for soup or any curries. Home made veggie broth is good for health. No preservatives and its fresh one to use. The below picture is carrot & potato veggie broth.




VEGGIE BROTH


Ingredients 


Any veggies
Water
little salt

Method


Bring all together to boil in the stove or microwave.

Filter water and veggies separately.

Use veggies for curries or any side dishes.

Veggie water with salt is broth which is very tasty for soups or any gravies.


CHICKEN BROTH


Ingredients 


Chicken
Water
Salt

Method


Same as veggie broth procedures.

QUICK CARROT POTATO SPICY SIDE DISH

Serving size - 2 or 3


Preparation time - less than 5 minutes


Cooking time - 5 minutes

 

 


This recipe is very simple and quick. My kid always love to have this side with rasam or curd rice. Our family's favorite side dish!!!! I love this side dish from my childhood. It is not much spicy. If you want you can reduce the spicy.

Ingredients


Carrots - 2 (sliced small cubes)
Potatoes - 1 (sliced small cubes)
Onions - 3 tbsp (optional)
Sambar powder - 1 tsp
Salt - as needed
Mustard seeds - 1/2 tsp
Curry leaves - 3 or 4 leaves
Oil - 2 or 3 tsp

Method



  • Boil carrots and potatoes with 1/2 cup of water and little salt in a microwave safe bowl for 4 minutes. 
          Note :
          I set my microwave for boiling fresh veggies and weigh for 8 oz. It automatically set for 4min.
  • Separate water and veggies using strainer. Keep veggie water aside and take veggies in a bowl.
  • Heat oil in a pan, add mustard seeds. Once it splutters, add curry leaves, boiled veggies, sambar powder and salt. Fry for 1 or 2 minutes. 
  • Serve it with any rice.

Note

INDIAN STYLE PASTA

Serving size - 1


Preparation time - 5 minutes


Cooking time - 15 to 20 minutes

 

 


I love pasta from my childhood days. My mom made Indian style pastas. So I love Indian style pastas than original style of pastas. I and my brother would love to have those pastas often. She made for us. Every time while making pasta I use to think of those days!!! We never get back those golden days again!!!! 


Ingredients


Pasta - 1/2 cup
Water - 1 1/2 cups
Onions - 1/2 cup Chopped
Tomatoes - 1/2 sliced
Garlic - 1 or 2 pods
Green chilly - 1
Pizza hut crushed pepper - 1/4 or 1/2 packet
Red chilli powder - 1/8 tsp (optional)
Cilantro - few for garnishing
Sugar - a pinch (optional)
Salt - as required
Oil - 1 1/2 tsp

Method



  1. Boil pasta with water and salt for 10 minutes or until they are cooked. 
  2. Remove pastas to the strainer and show it in the cold running water for few seconds. Keep it aside.
  3. Heat oil in a pan. Add Onion, garlic, green chilly, crushed pepper and fry for a minute or until onions are transparent.
  4. Add tomatoes, sugar and salt. Fry for few minutes or until tomatoes are cooked or soft.
  5. Add red chilli powder and fry for few minutes. 
  6. Finally add pastas to the masala and fry for 1 or 2 minutes and switch off the stove.
  7. Garnish it with cilantro.

HOME REMEDY FOR THROAT PAIN / DRY THROAT

If you have dry throat or severe throat pain, please have this following drink 3 to 4 times a day. You can feel the improvement. This is our Indian home remedy treatment. I went to doctor office in USA for severe cold and throat pain. They prescribed this same drink. My mom scolded me, if I would say this you won't hear my words, but you could hear the same words from your doctor with $50 fees :)

This is not only for throat pain, also a good health drink. My great granny(85+ ) had this drink regularly from her childhood to death. 


 

Ingredients


Honey - 1 tsp
Lemon - 1/4 no.
Warm Water - 200 ml

Method

Mix all together and drink.

BREAD ROLL

It is a quick and easy recipe. You can also use cheese and pepper inside the roll for kids who doesn't love much spicy. It is also good for health. It is also a picnic recipe. Instead of frying veggie mixture, you can grill it and roll it in the bread slice.



Ingredients

Bread - 6 slices
Mozzarella cheese - 6 tbs (optional)
Carrot - 1
cabbage - 1/2 bowl
beans - 5 or 6
red chilli  powder - 1/2 tsp
lime juice - 1/2 tbs
Soy sauce - 1 tsp
Tomato puree - 1/2 tsp
garam masala - 1/4 tsp
cumin powder - 1/4 tsp
salt - 1/2 tsp
Sugar - 1 tsp
Oil - 2 tbs
Ghee - As required ( optional)






  1.  Mix all the ingredients in a vessel except oil, ghee, cheese and bread. Keep it aside for 30 mins to 1 or 2 hours.
  2. Heat oil in a pan and fry the mixture until it raw smell goes. Allow it cool for sometime.
  3. Keep one spoon of the mixture and cheese on the bread slice and roll it. If you want apply ghee on the bread roll slightly or else leave as it is.
  4. Preheat the cookie maker, once it gets ready, keep 3 rolls at a time and cook it for 2 to 3 minutes on both sides of the rolls.
  5. Bread rolls are ready within 5 mins. Serve it hot with ketchup or plain. 
Note:

If your kid doesn't like the brown edges, you can remove it and roll the bread.

SALT AND SPICY APPLE SNACK

It was a cold evening. I love to eat our Indian street food spicy pineapple. I don't have pineapple in my fridge. So I thought of doing the same spicy food with apple. It was awesome, delicious. I wish to share this with you all.



Ingredients


Apple - 1
Red chilli powder - less than 1/4 tsp
Salt - a pinch

Method


  • Mix red chilli powder and salt in a small plate.
  • Slice apple into small pieces.
  • Sprinkle red chilli powder and salt mixture on the sliced apple.
  • Serve it as it is. It will be awesome. If you wish, you can use any sauce to dip.

CARROT CUCUMBER SANDWICH

This sandwich is easy and quick recipe. Instead of carrot and cucumber, you can add any vegetables. It is healthy recipe and low calorie food too.  I usually make this as breakfast for my husband.  It is very light to stomach. It is also good snack or breakfast to Kids too.

 

 

Ingredients


Bread -  2 slices
Carrot - 1 no.
Cucumber (small) - 1 no.
Pepper - a pinch
Salt      - a pinch
Mozzarella shredded cheese - 11/2 to 2 table spoons
Butter - a small amount



Method

  1. Cut the carrot and cucumber into round slices.
  2. Mix salt and pepper for seasoning carrots and cucumbers
  3. Add shredded cheese onto the top of the each bread.
  4. Add butter into the pan and toast the bottom of the each bread in the medium flame and flip the shredded cheese side 1 or 2 seconds and remove it from the pan.
  5. Add seasoned carrots and cucumbers on the shredded cheese side of the bread and close this with another toasted bread .(Two shredded cheese side facing together)
  6. Finally roll the knife on the whole sandwich.

SPINACH PORUCHAKUZHAMBU

Serving Size - 2


Ingredients


Moong dal - 2 tbsp
Spinach - 1 1/2 cups
Sambar powder - 1 tbsp
Cumin powder - 1 tsp
Onion vathal/vadam - 1 tbsp
Water - 1/2 cup +1 cup
Salt - as required
Oil - 2 tsp


Method

  1. Soak moong dal overnight or pressure cook with two extra whistles from usual.
  2. Chop spinach and keep it aside.
  3. Add moong dal, cumin powder, sambar powder and 1/2 cup water  in a vessel and place inside a pressure cooker. Allow whistles as same as cooking for plain rice.
  4. Heat pan with 1 cup of water and add chopped spinach to it. Allow it to boil until spinach are cooked. 
  5. Remove dal from the cooker, add dal, salt and coconut powder to the spinach pan. Allow it to boil for 2 minutes.
  6. Heat oil in a small pan and add onion vathal to it for seasoning. Once it pops, add it to the kuzhambu.
  7. If you feel it is too thick, add little water.
  8. Spinach porucha kuzhambu is ready now and serve with plain rice.

Note

  • You can use shredded coconut paste instead of coconut powder and cumin powder.
  • Coconut paste -  1 1/2 tsp coconut + 1/4 tsp cumin seeds + water.
  • This will be more taste than coconut powder.

MICROWAVE CASHEW PAKODA

Serving size - 1 kid


Preparation time - 2 minutes


Cooking time - 2 minutes




Ingredients


Shallow fried Cashews - 1/4 cup
Besan flour - 1 tsp
Rice flour - 1 tsp
Red chilli powder - 1/8 tsp or as you need
Salt - a pinch
Hing powder - a pinch
Water - 2 tsp
Oil - 1 tsp

Method


Mix all the ingredients well in a microwave safe bowl and keep it in a microwave for a minute.





Take out and mix. keep it for 30 seconds again.

You are cashew pakodas are ready




Note

  • I have used readymade fried cashews.
  • If you want to fry cashews, you can do shallow fry using stove or microwave.
  • Microwave : Add 1/2 tsp of oil or 1/4 tsp of ghee to a microwave safe bowl and add cashews to it. Keep it for 1 or 2 minutes with 3 to 4 stirs between every 30 seconds. Once it becomes slightly brown, your fried cashew are ready.
  • Stove : Add same amount of oil or ghee in a heated pan and add cashews. Fry until it becomes slight brown color. It may take 2 or 3 minutes.
